The coolship housed in this room would have originally been an open vessel and wort the sugar solution that will be fermented to produce beer, would have been allowed to cool in the atmosphere, assisted by the opening of the louvres on the side of the building. Unfortunately,with the air comes wild yeast and bacteria, increasing the risk of product infection and a top has therefore been fittedand the vessel is now used as a storage tank to feed a modern heat exchanger.

the fact that this vessel is made of copper is important to the brewing process as copper ions will be donated to the wort and help reduce sulphury noses on the finished beers.
